Meatless Monday

Tonight: Vegetarian Pad Thai. I skipped the tofu--not a fan--and replaced it with sauteed golden chunks of sweet dumpling squash. It's milder than acorn, but I think more flavorful. We added fresh cilantro from the garden, some frozen peas and beans, squeezes of lime and dashes of red chili sauce. Overall, very fast and easy. And the kids ate seconds.
